Heirlooms make a wonderful tomato sauce. This sauce can be made with either yellow or red heirloom varieties. The tomatoes are reduced slowly to concentrate the flavors and the sugars in the fruits, the sauce is finished with fragrant basil and a  dash of aged balsamic vinegar. ​
In this simple recipe, raw pasta and cherry tomatoes are simmered together in a single pan, cooking the pasta and forming a thick, starchy sauce at the same time.​ Kale or spinach is added after about 6 minutes while the pasta finishing.​
You steam baby potatoes until they’re just tender, let them cool enough to be handled, then press them between your palms until they flatten a bit and you hear their skins begin to snap. Next, you heat up some oil in a skillet and fry the potatoes until they’re nice and brown on their flat sides. Each potato is then crisp and caramelized but still moist inside.​​

This recipe has a few more ingredients and steps than other smooth soups you've made, but you will want to make it again as soon as it's gone. The only time it would feel laborious is if you decided at 5 PM to get it on the table tonight.  Its flavors sweeten and develop with a day or two in the fridge.
These radishes are coddled so all their sweetness comes out. Exposing much of their surface area to brown butter gives them a pretty caramel color and delicate flavor, which the mint subtly accents. ​
Browning the butter takes it a step further to add a nutty note, enlivened on the other end by the mint. -
